Bread and bun slicing blades
At MESI we manufacture high-precision bandsaws for industrial slicing. Our solutions deliver clean cuts on all kinds of doughs, from rustic loaves with hard crusts to delicate pastries, reducing waste and preventing the product from being crushed.
Our blades are cut and welded under strict tolerances to ensure consistent tension in the cutting set, achieving straight, uniform slicing throughout the working day.
BAND SAW BLADES FOR INDUSTRIAL BAKERIES

CV Saw
Tooth: 12.5mm.
The bakery standard. Ideal for wholemeal, rye and seeded breads. Excellent penetration on consistent crusts.

CV DB Saw
Tooth: 12.5mm (Double bevel).
Same profile as the CV, but with a secondary bevel. Delivers a much smoother finish and a finer slicing texture.

CV VARY Saw
Tooth: Variable.
The best option for crustless sandwich loaves. Variable pitch reduces vibration, achieving perfect penetration without tearing the crumb.

CV 6 / CV 6 DB Saw
Tooth: 6mm.
Designed for soft products and pastries (muffins, buns, croissants). Ideal for small and artisan slicing machines.

V15 DB Saw
Tooth: 1.7mm (Micro-toothing).
Provides a longer working life and a very clean cut. A great choice for industrial lines where appearance matters.

CV W Saw
Tooth: Concave profile + micro-tooth.
Specialist for very hard-crust breads or loaves with nuts (walnuts). Slices without crushing the core of the product.
Reciprocating blades for bread slicers
We supply long-life blades for reciprocating machines (JAC, Wabama, Daub, Berkel, etc.). Manufactured in high-carbon steel.
- Special coatings: Non-stick and antibacterial options to prevent sticking.
- Full compatibility: Available with rivets, pins or holes in different diameters.
- Food-grade hygiene: Materials compliant with food safety requirements.
SIZES AND MACHINE COMPATIBILITY
We offer standard and custom lengths for all machines on the market. If you can’t find your size, our technical team will manufacture it for you.
FAQ ABOUT BAND SAW BLADES FOR SLICING BREAD
How can I prevent bread from being crushed when slicing?
Crushing during industrial slicing is often caused by a dull tooth or by choosing a blade profile that doesn’t match the crust hardness. At MESI, we address this technical challenge with specialised profiles such as the CV W Saw or the micro-toothed V15 DB. These designs are optimised to penetrate crispy, dense crusts without excessive vertical pressure, helping preserve the crumb structure and preventing deformation on softer products such as sandwich loaves or brioches.
Beyond tooth geometry, correct tension of band saw blades for bread and pastries on industrial machines is key to achieving a clean cut. A high-precision blade reduces friction and heat generation—two factors that can contribute to product collapse during slicing. By using products from Metalúrgica de Sierras S.L., bakeries and industrial plants can improve the visual finish, reduce waste and keep each slice consistent in thickness and texture from the first piece to the last.
What are the benefits of non-stick coated blades?
When processing products with high moisture, fats or sugars, residues tend to stick to the blade and affect the slicing quality. Our food-industry blades with non-stick coatings (e.g., PTFE) or antibacterial treatments reduce friction, preventing dough from adhering. This enables faster, more continuous slicing, especially in industrial production of pastries, cakes or speciality breads with fillings.
In addition to improving the appearance of the cut, these industrial blades simplify cleaning and support better hygiene by limiting bacterial growth. By reducing organic build-up, the steel is better protected against corrosion and maintenance intervals can be extended. At MESI Saws & Blades, we recommend this option for plants aiming to meet demanding food safety standards without slowing production.
Are your blades compatible with JAC or Wabama machines?
Yes. At MESI we manufacture high-precision replacement parts compatible with leading international brands. We produce blades and band saws for bread designed to fit equipment from manufacturers such as JAC, Wabama, Daub, Berkel and Oliver. Each replacement is made to match original anchors and technical specifications, so your bread slicer performs efficiently and benefits from the durability of our European steel.
Working with a specialised supplier in La Muela, Zaragoza helps ensure fast lead times for blades used to slice or portion. Whether you need standard replacements or large-volume custom sizes, our team at Metalúrgica de Sierras S.L. ensures perfect blade alignment. This improves slicing quality and can help extend the service life of mechanical components in bakery equipment.
